The 15 course tasting menu took about 5 hours, but this was time well spent. It was a rollercoaster of tastes and experiences. The dishes were partitioned in two, arguably three, groups (sour and umami) but had a common factor: the use of fermented products. Almost every course had some fermented ingredient which caused special and surprising tastes. Highlights of the meal were the quail and the razor clams. Both made to perfection. These guys clearly got a great deal of experience from the three star Martin Berasatgui in San Sebastian but here they created their own beautiful unique culinary experience. The staff was very friendly and personal to give a friendly and welcoming feeling. If you have the time to go here, definitely do!
