Miguel's Mexican Cuisine - Corvallis

I've been wanting to try this place for a while, and when my roommate started craving Mexican rice and beans, we decided to stop by just before closing time. It was the best decision ever! The food was delicious, and the portions were generous. I will definitely be returning. As for vegetarian options, there are plenty of fantastic choices!

Incredible! This is the best burrito I've had in ages. They also offer plenty of vegetarian options! It's hard to believe such a gem is located in Corvallis!

Absolutely delicious and fantastic in every aspect! The chicken fajitas were bursting with flavor, creating a delightful experience. The rice and beans were hearty and tasty, while the guacamole and sour cream were fresh and flavorful. The chips had the perfect crunch to them. Everything was neatly packed in takeout containers. The food truck attendant was both friendly and efficient. Hallelujah! I can’t wait to return!

I keep returning to this place because it's definitely one of my favorite Mexican restaurants in town. While the prices may be slightly higher, the quality of the food is clear, and I've never had any problems with getting something customized to my liking. It’s a solo operation with just one guy running the food truck, but the food is truly excellent.

The red sauce on the Red Fire Burrito was a bit too sweet for my taste, but the salsa was absolutely amazing. Additionally, the service exceeded my expectations! I also appreciated the extensive vegetarian options available.
