Many praiseworthy superlatives could be used to try to define Bernard Bordaries' cuisine. They would be all welcome, so the quality is high, because the chef takes us very far in perfection, from the simplest to the most sophisticated. The palate gives the tone of joy: unexpected and exquisite. There is no extravagance or eccentricity: only of justness. Precise tastes, tasty, refined associations and permanent discoveries. If gastronomy is an art and art is a language that, by knowledge, its poetry, its aesthetic causes emotions then Bernard Bordaries is a very great artist.
