I know cakes like this need extra fridge time to set, but both cakes were fairly frozen in the middle, so everyone thought they were ice cream cakes : I just told them it was normal, and a lot of people like ice cream cake anyway, so not a total disaster. If I knew, I would have let it room temp for a while, instead of putting it in the fridge before serving
