I remember having a coconut milk-based vegetable soup, white rice with coconut-curry tofu and sauce, a salad with various vegetables and mushrooms, and a rice noodle salad. For dinner, there was lasagna with options for different dietary needs, various breads and spreads, Mediterranean salad, and cookies. Each meal was served with basil-lime water for tea. Overall, my body felt nourished and satisfied from the food. It's important to note that Breitenbush is known for its hot springs, not just its amazing food.
This hot spring retreat center offers all vegetarian, organic meals. We purchased day tickets to access the lunch and dinner buffet. They had special diet options for the main dishes (no ice, no milk, and possibly no gluten) and everything was delicious and plentiful. For lunch, we had a kale soup, roasted vegetables, bread, and salad. In the evening, we enjoyed a polenta casserole and salad. The atmosphere in the forest was very relaxing, with beautiful staff and a peaceful, quiet environment.

Each meal was accompanied by basil and lime infused water for tea. Overall, my body felt nourished and satisfied after the meals. Keep in mind that the highlight of Broadbush is the hot springs, not just the dining experience.
