For those asking for the recipe (all temps are degrees Celsius by the way) *Shortcrust Pastry Base* 1) Sieve together 250g plain flour and 70g icing sugar 2) Mix in 125g butter until breadcrumbs like texture 3) Stir in 2 eggs yolks until doughy (use a little water to loosen if needed) 4) Roll out pastry for your tin and then chill for 30 mins 5) Stab some some holes (use a fork, but dont go all the way through the pastry) and then line with baking paper and baking beads and cook for 10 mins at 160degrees 6) Remove the beads and cook for another 20 mins 7) Leave to cool until ready for the filling *Filling* 1) Mix together 5 eggs, 140 grams caster sugar and 150ml of double cream 2) Add too the mix juice of two large blood oranges and one large lemon 3) Sieve the mixture into your pastry 4) Cook at 160 degrees for 30 minutes or until set 5) Remove from the oven leave to chill. 6) Brush the filling with sugar glaze (melted down sugar and water) to give it a shine
